Fish fillets in creamy chive sauce

    Serves: 4 

    • 4 white fish fillets (cod or other)
    • lemon juice
    • 2 tablespoons butter
    • 1 small onion, minced
    • 250ml double cream
    • 200ml creme fraiche
    • 1 large bunch chives

    1. Salt the fish and drizzle with lemon juice.
    2. Melt the butter in a pan. Add the fish, cover and cook over low heat for 10 to 12 minutes. Remove from the pan and keep warm.
    3. Fry the onion in the pan until translucent. Add cream and creme fraiche and let simmer over low heat. Add salt, pepper and chives.
    4. Return to the pan to reheat.
