Spaghetti with spinach and gorgonzola

    A quick and easy pasta dish with spinach and peppers in a creamy gorgonzola sauce

    Serves: 4 

    • 450g spaghetti
    • 1 large bunch spinach
    • 1 red pepper
    • 1 yellow pepper
    • 3 tablespoons olive oil
    • 50ml double cream
    • salt and pepper
    • 200g gorgonzola, crumbled

    1. Cook spaghetti in salted water till al dente.
    2. Clean and trim spinach and cut into strips. Core and seed pepper and cut into strips.
    3. Heat olive oil in a large frying pan. Fry pepper till softened, 5 to 7 minutes whilst stirring. Add spinach and cook till wilted.
    4. Add cream and bring to the boil. Let cook for 1 minute and season with salt and pepper. Stir in gorgonzola.
    5. Serve with the spaghetti.
