Manchego cheese and grape salad

    Manchego cheese and grapes go so well together - adding torn iceberg lettuce and a light vinaigrette will upgrade the pairing to a refreshing, tasty salad.

    Serves: 4 

    • 1 iceberg lettuce
    • 200g Manchego cheese, sliced into bite-size cubes
    • 100g seedless red grapes, halved
    • Dressing
    • 2 tablespoons red wine vinegar
    • 4 tablespoons olive oil
    • 1/2 teaspoon honey
    • 1/2 teaspoon Dijon mustard, or to taste
    • salt and pepper, to taste

    1. Break the iceberg lettuce into individual leaves; wash well and spin dry. Tear the leaves into bite-sized pieces.
    2. Mix vinegar, oil, honey and mustard in a mug; season with salt and pepper.
    3. Place the iceberg lettuce, grapes and cheese in a bowl; pour dressing on top and toss everything together.
