If you want to avoid food waste, don't throw out those leftover egg whites - make meringues.

2 egg whites
100g caster sugar
3 tablespoons light brown soft sogar
1 teaspoon instant espresso
1 pinch salt

Preheat your oven to 120 C / Gas 1/2. Line a baking tray with greaseproof paper.
In a bowl beat egg white and salt till it stands in soft peaks. Gradually add the half of each sugar and keep beating till very stiff.
Mix the rest of the two sugars and fold into egg whites. Now you can either place small meringues on the baking tray using two teaspoons, or fill the mixture in a pastry bag and pipe them onto the baking tray.
Bake in the centre of the preheated oven for 45 minutes. Let cool till you can remove them from the baking tray and let fully cool on a wire rack.
