Pointed white cabbage with bacon

    Pointed white cabbage is my favourite cabbage because it's so mellow and sweet. Don't add too much seasoning so as not to overpower its natural taste.

    Serves: 4 

    • 1 small pointed cabbage
    • 100g bacon, diced
    • 1 shallot, minced
    • 2 tablespoons olive oil
    • salt and pepper
    • ground nutmeg

    1. Trim cabbage and remove any thick midribs. Cut cabbage into thin strips.
    2. Bring a large pot with salted water to the boil. Blanch cabbage for 1 minutes, then immerse in ice cold water and drain well.
    3. Heat olive oil in a frying pan and fry bacon and shallot till the bacon has drawn its fat. Add cabbage and cover. Stew for 5 minutes. there should be almost no liquid left in the pan. Season with every little or no salt, pepper and nutmeg.
