Pointed white cabbage is my favourite cabbage because it's so mellow and sweet. Don't add too much seasoning so as not to overpower its natural taste.

1 small pointed cabbage
100g bacon, diced
1 shallot, minced
2 tablespoons olive oil
salt and pepper

Trim cabbage and remove any thick midribs. Cut cabbage into thin strips.
Bring a large pot with salted water to the boil. Blanch cabbage for 1 minutes, then immerse in ice cold water and drain well.
Heat olive oil in a frying pan and fry bacon and shallot till the bacon has drawn its fat. Add cabbage and cover. Stew for 5 minutes. there should be almost no liquid left in the pan. Season with every little or no salt, pepper and nutmeg.
