Eggless strawberry tiramisu

    If you are reluctant to use raw eggs, you can make a perfectly delicious strawberry tiramisu without eggs.

    Serves: 8 

    • 1kg strawberries
    • 250g mascarpone
    • 150g natural yoghurt
    • 4 teaspoons vanilla sugar
    • 200ml whipping cream
    • 1 packet sponge fingers
    • orange liqueur
    • grated white chocolate
    • 3 tablespoons icing sugar

    1. Wash, hull and slice the strawberries. Spread half of them over the bottom of a trifle bowl.
    2. In a jug whisk mascarpone with yoghurt and vanilla sugar. In another jug whip cream till stiff and fold into mixture.
    3. Spread mixture over strawberries and cover with sponge fingers.
    4. Drizzle with orange liqueur and sprinkle with chocolate. Puree the remaining strawberries with icing sugar and spread over sponge fingers.
    5. Cover and refrigerate for at least one day before serving. Sprinkle with chocolate just before serving.
