About this recipe: Juicy, tender spinach has a natural affinity with sesame and looks stunning flecked with the pale creamy seeds.

Serves: 4 

  • 450g spinach, thick stems removed
  • pinch of dried crushed chillies
  • 2 tsp toasted sesame oil
  • 1/2 tsp salt
  • 1 tsp lemon juice
  • 1 tbsp sesame seeds, toasted

  1. Put the spinach in a medium saucepan with just the water clinging to the leaves after washing. Add the crushed chillies and cook for 3–5 minutes until just wilted. Drain thoroughly and transfer to a serving bowl.
  2. Sprinkle the spinach with the sesame oil, salt and lemon juice and toss to mix. Sprinkle with toasted sesame seeds, then serve at once.


*This recipe would also work well for broccoli. Cut the spears into florets and slice the stems. Either cook in a little water or steam the broccoli with the chilli flakes for 3–4 minutes or until just tender. Complete as above.
*Dried crushed chillies are not the same as chilli powder and are readily available in jars.
*This would make a lovely dish to serve as part of a Chinese meal
