Chilled peach soup

    Une soupe de pêches réduite en parfait velouté et servie dans des coupes individuelles. Préparez ce dessert la veille pour le déguster bien refroidi après un repas copieux.

    Serves: 4 

    • 5 large ripe peaches
    • 500ml water
    • 80g caster sugar
    • fresh basil or mint leaves, minced

    1. Bring a pot with water to the boil and blanc the peaches for 40 to 60 seconds. Immediately immerse in cold water and peel. Remove stones and cut into wedges.
    2. Discard blanching water and add 500ml water and sugar to pot. Add peaches and cook till soft, about 7 minutes.
    3. Remove from hob and let cool.
    4. Drain peaches and reserve cooking liquid. Puree peaches and gradually add liquid till you obtain the desired consistency.
    5. Refrigerate soup for 5 to 6 hours. Serve sprinkled with basil or lime leaves.
