Melon sorbet

    You don't need an ice cream maker for this sorbet. A light dessert that is very low in fat. Adjust the sugar amount depending on the sweetness of the melon.

    Serves: 6 

    • 6 tablespoons caster sugar, as needed
    • 1 ripe honeydew melon (about 800g)
    • 4 to 5 tablespoons lemon juice (from 1 to 2 lemons)

    1. In a small saucepan heat the sugar with 6 to 8 tablespoons water. Simmer till dissolved. Let cool.
    2. Scoop the melon pulp from the melon. Remove the seeds. Puree till smooth. Stir in the sugar syrup and lemon juice.
    3. Tip into a freezer-safe container with a lid and place in the freezer for 4 to 5 hours. Stir vigorously once every hour.
    4. Let soften for 30 minutes before serving.
