Pointed cabbage salad with apples

    Pointed cabbage is so tender that you don't need to cook it. In combination with apples, it makes a lovely salad.

    Serves: 4 

    • 750g pointed cabbage, trimmed and cleaned
    • 2 teaspoons salt
    • 3 tablespoons apple cider vinegar
    • 3 tablespoons olive oil
    • 3 tablespoons pumpkin seed oil
    • 1 pinch sugar
    • 3 tart cooking apples/summer apples

    1. Cut cabbage into thin strips. Add to a bowl with salt and toss. Leave to stand for 2 to 3 minutes, then rinse thoroughly under cold water and drain well.
    2. In a bowl stir vinegar, salt, pepper, oil and sugar till smooth.
    3. Wash, quarter and core apples and julienne. Toss with cabbage and dressing and serve at once.
