Swedish elderflower cordial

    Elderflower cordial mixed with water makes a very refreshing drink. If you want to enjoy it later in the year you can also freeze it.

    Makes: 3 L cordial

    • 2.5L water
    • 45g citric acid powder
    • 35 to 40 elderflower heads
    • 3 to 4 lemons
    • 2 oranges
    • 2kg caster sugar

    1. Bring water to the boil in a large pot. Add sugar and remove from heat. Stir till sugar is dissolved. Let cool slightly, then add citric acid and stir again till citric acid is dissolved.
    2. Gently clean elderflowers. You can rinse them but make sure not to wash out all the pollen, which contains all the flavour. Scrub lemons and oranges well. Dry and slice thinly.
    3. Place a layer of elderflowers in a large jug, followed by a layer of lemon and orange slices. Repeat till all the elderflowers and citrus slices are used up.
    4. Pour the lukewarm (not hot!) syrup over the mixture.
    5. Cover and refrigerate for 3, better 5 days. Check every so often if the flowers are fully immersed in liquid and press them down if necessary.
    6. Strain through a fine sieve into a sterilised bottles. Refrigerate or freeze. If freezing, leave ample space for the cordial to expand.
