Pasta with peas, speck and gorgonzola sauce

    A speedy ans easy pasta dish for a weeknight dinner.

    Serves: 4 

    • 500g spaghetti or other pasta
    • 100g speck, diced
    • 400g garden peas, fresh or frozen
    • 300ml double cream
    • 50g freshly grated Parmesan, grated
    • salt and pepper
    • nutmeg
    • 100g gorgonzola

    1. Bring a pot of lightly salted water to the boil and cook the pasta till al dente according to the package instructions. Drain and set aside.
    2. In a pan fry speck till crispy. Add the peas and fry briefly. Then stir in the cream and Parmesan cheese and season with salt, pepper and a pinch of nutmeg.
    3. Add pasta and gorgonzola to the pan with the sauce, mix and reheat but don't let it cook. immediately.
