Croque with goats cheese

    I love goats cheese so why not use it for the classic French Croque monsieur? In this recipe the croques are baked in the oven.

    Serves: 2 

    • 200g fresh goats cheese, sliced
    • 1 tomato, sliced
    • 8 slices white bread
    • 4 slices Emmental (optional)
    • 4 slices cooked ham
    • 1 bunch basil (3 to 4 leaves per croque) or pinches of dried basil
    • olive oil

    1. Preheat the oven to 230 C / Gas 8.
    2. On 4 if the bread slices place 1 slice Emmental and 1 slice ham. Top with 2 tomato slices, then 3 slices goat cheese. Finish with the basil leaves or dried basil and a second bread slice. Press well.
    3. Brush the bread with olive oil. Line a baking tray with greaseproof paper and place the croques on the tray. Bake till golden brown, about 10 minutes.
