Spiced semolina with walnuts

    Semolina is one of those utterly moreish desserts that is not eaten nearly enough. Try this spicy, nutty version and see how good it can be.

    Serves: 4 

    • 50g semolina
    • 30g caster sugar
    • 600 ml semi-skimmed milk
    • 15g unsalted butter
    • grated zest of 1/2 lemon
    • 1/2 tsp mixed spice
    • To serve
    • 30g walnut pieces, chopped
    • 4 tsp maple syrup, golden syrup or runny honey

    1. Put the semolina and sugar in a saucepan. Pour in the milk, add the butter, lemon zest and mixed spice, then bring to the boil on a medium heat, stirring occasionally.
    2. Immediately reduce the heat and simmer the semolina gently for 15 minutes, stirring from time to time, until thickened.
    3. Allow to cool slightly, then pour the semolina into four ramekins or individual serving dishes. Sprinkle the walnuts over the top and drizzle each dessert with 1 tsp of the syrup or honey. Serve warm.


    Other nuts could be sprinkled on top, depending on what you have in the cupboard, such as almonds (toasted) or hazelnuts. You could also stir 50g raisins or sultanas into the semolina, if liked.
