Banana and peach stir-fry

    Use fresh and canned fruit to whip up a quick, healthy dessert like this one when you fancy something sweet to follow a meal. You can serve this sweet stir-fry plain with ice cream and yoghurt or use it as a tasty topping for waffles or crepes.

    Ingredients
    Serves: 4 

    • 20g unsalted butter
    • 2 sliced bananas
    • 425g can peach slices
    • zest of 1 orange
    • 2 tbsp elderflower or ginger cordial

    Method

    1. Melt 20g unsalted butter in a frying pan and add 2 sliced bananas, a 425g can peach slices, drained, and the grated zest of 1 orange. Stir-fry for about 2 minutes over a high heat until the fruit is hot and beginning to brown. Stir in 2 tbsp elderflower or ginger cordial and serve at once, with plain yoghurt or ice cream.
