Mix 4 finely chopped spring onions and 100g chopped ready-to-eat dried apricots with 100ml mayonnaise and 100ml plain low-fat yoghurt. Add 1-3 tsp curry paste (your favourite strength), to taste, and seasoning. Stir in 300g diced cooked turkey. Cook a 680g pack frozen rice with vegetables in a large frying pan according to the pack instructions. Add the chicken or turkey mayonnaise mixture to the rice mixture and stir over a very low heat for 2-3 minutes to heat through, stirring frequently. Serve immediately.
