Toss 350g Quorn pieces in 3 tbsp red pesto, then thread onto skewers with 2 diced peppers, preferably 1 yellow and 1 green (the skewers make the pieces easier to turn, but are not essential). Cook under a medium-hot grill for 8-10 minutes, turning several times, until the peppers are slightly charred and tender. Remove the pieces from the skewers. Warm 4 large soft flour tortilla wraps (see left), then spread a 230g carton tzatziki over them, leaving a 2.5cm border. Divide the Quorn and pepper filling among them, spooning it on to one half of the tortilla. Fold the uncovered tortilla over the filling, then carefully fold again into a fan shape.
