Guavas and plums with vanilla syrup and pistachio nuts

    Serves: 4 

    • 425g can plums
    • 425g can guava halves
    • 1 tsp pure vanilla extract
    • 50g chopped pistachio nuts

    1. Drain a 425g can plums, pouring the syrup into a fairly large pan, then drain the syrup from a 425g can guava halves into the same pan. Boil the syrup hard for 4-5 minutes or until reduced by about half. Meanwhile, stone the plums if necessary and divide them among four bowls. Add the guava halves. Add 1 tsp pure vanilla extract to the syrup and spoon it over the fruit. Sprinkle with 50g chopped pistachio nuts and serve.
