    About this recipe: Pine nuts, sun-dried tomatoes and fresh basil transform ordinary beef or pork burgers into a Mediterranean delight. Serve with a pepper, onion and olive salad, or grilled corn on the cob and toasted chunks of ciabatta for a satisfying summer meal.

    Serves: 4 

    • 250g each of lean minced pork and lean minced beef
    • 2 crushed garlic cloves
    • 2 tbsp finely chopped pine nuts
    • 8 soft sun-dried tomatoes
    • 2 tbsp chopped fresh basil

    1. Mix 250g each of lean minced pork and lean minced beef with 2 crushed garlic cloves, 2 tbsp finely chopped pine nuts, 8 soft sun-dried tomatoes, chopped, and 2 tbsp chopped fresh basil. Season with black pepper.
    2. Divide the mixture into four and shape into burgers. Grill using a high heat, or barbecue, for 10-12 minutes or until golden brown, turning once.

    Made these for our Saturday night treat dinner. Easy to make and absolutely delicious ommitted the pine nuts as feeding to the kids and a bit worried about nut allergies. Everyone loved them - 06 May 2012
