Apple and Walnut Cake
A delicious recipe, if you are like me and love apples and walnuts...
Ingredients
Serves: 8
- 250g (8 oz) plain flour
- 2 teaspoons ground cinnamon
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon salt
- 300g (10 oz) caster sugar
- 1 teaspoon vanilla extract
- 3 tablespoons water
- 200ml light oil
- 3 eggs, lightly beaten
- 3 apples, peeled, cored and quartered
- 125g (4 oz) chopped walnuts

- Pre-heat oven to 190 degrees C / Gas mark 5. Grease a 9 inch / 23cm cake tin.
- Sift together the flour, cinnamon, bicarbonate of soda and salt.
- Add in sugar, vanilla, water, oil and eggs; mix until well-blended.
- Stir in apple quarters and chopped walnuts.
- Pour into tin and bake for 50 minutes or until a knife inserted into the middle comes out clean.
- Cool on a wire rack before serving.

My entire family loved this, it went in a matter of a day. I didn't think there was so much oil needed however as I only used 100ml. I also added in Mixed Spice instead of cinnamon as it gave the cake a warm essence to it! Just keep on adding the spice until you can taste it as two teaspoons of ground cinnamon simply isn't enough! Also try mixing in ground cinnamon into your icing for another gorgeous taste and dribble it on top! Perfection! - 10 Sep 2011
Used different ingredients. I made this recipe with Dove Farm's GF white bread flour. I kept the same amounts as stated. It was a huge success! - 08 Nov 2010
. Great cake. i improvised a little by using less sugar and adding chopped mixed nuts. I don't think you need so much sugar, I used 250g instead of 300g - 26 Jul 2011
