Whisk 2 tsp caster sugar, 2 tbsp wholegrain mustard and 3 tbsp cider vinegar together. Gradually whisk in 6 tbsp extra virgin olive oil to make a thick dressing. Stir in 4 tbsp chopped fresh dill and 2 tbsp capers.
*Pan-fried, griddled or grilled salmon or trout fillets. *Fish and seafood kebabs, especially chunks of salmon and white fish skewered and grilled until firm. *Hot-smoked salmon on a mixed-leaf salad. *Crispy battered calamari rings or filo-wrapped prawns (buy chilled or frozen and cook according to the pack instructions).
