Tomato bisque

This smooth, comforting bisque is made with only a few simple ingredients: canned tomatoes, crème fraîche, brandy, prawns and parsley. It can be easily assembled at any time of the year and is best served with crisp, ready-made croutons or toast.

Ingredients

2 x 400g cans chopped tomatoes with herbs
200ml full-fat crème fraîche
2 tbsp brandy
200g cooked, peeled prawns
2 tbsp chopped fresh parsley

Preparation method

1. In a food processor or blender, process 2 x 400g cans chopped tomatoes with herbs with 200ml full-fat crème fraîche and 2 tbsp brandy. Heat in a pan until boiling.
2. Add 200g cooked, peeled prawns, thawed if frozen, and seasoning. Return to the boil, and cook for 1 minute or until heated through, then add 2 tbsp chopped fresh parsley.

…cooking tip

If you prefer not to add brandy, add a squeeze of lime juice or 1 tbsp sun-dried tomato paste, to enrich the flavour.
