200g (7 oz) butter
300g (11 oz) caster sugar
1/2 teaspoon vanilla extract
400g (14 oz) plain flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
125g (4 1/2 oz) chopped walnuts
425g (15 oz) prepared mincemeat, drained

Preheat oven to 180 C / Gas mark 4. Grease baking trays.
Cream butter, sugar and eggs together, then beat in vanilla. Sift the flour, salt and bicarbonate of soda together, and add to butter mixture. Mix until well blended. Stir in the nuts and mincemeat and mix well. Drop by teaspoonfuls on the prepared baking trays.
Used different ingredients.
I omitted the walnuts and put in crispy rice cereal instead, and subbed half the flour for wholemeal flour. The biscuits came out with a delicious, strong spicy flavour. I iced half of them and kept the others bare, and I think they were equally good. - 07 Aug 2008
