Luxury Mincemeat Biscuits

    For those who love mince pie, these scrumptious biscuits are a treat.

    Serves: 84 

    • 200g (7 oz) butter
    • 300g (11 oz) caster sugar
    • 3 eggs
    • 1/2 teaspoon vanilla extract
    • 400g (14 oz) plain flour
    • 1 teaspoon salt
    • 1 teaspoon bicarbonate of soda
    • 125g (4 1/2 oz) chopped walnuts
    • 425g (15 oz) prepared mincemeat, drained

    1. Preheat oven to 180 C / Gas mark 4. Grease baking trays.
    2. Cream butter, sugar and eggs together, then beat in vanilla. Sift the flour, salt and bicarbonate of soda together, and add to butter mixture. Mix until well blended. Stir in the nuts and mincemeat and mix well. Drop by teaspoonfuls on the prepared baking trays.
    3. Bake 8 to 10 minutes until light brown.

    Used different ingredients. I omitted the walnuts and put in crispy rice cereal instead, and subbed half the flour for wholemeal flour. The biscuits came out with a delicious, strong spicy flavour. I iced half of them and kept the others bare, and I think they were equally good.  -  07 Aug 2008


    Unfortunately I had the same issues with this recepie. It all kind of congealed together in the oven and came out more as a cakey/bready type substance. What a shame!  -  18 Dec 2011


    i halved this recipe and there was still more than enough. mine came out more cake than cookie so not sure what i did wrong (if i did), still delicious though and a great idea.  -  26 Jul 2009
