About this recipe: This salad is simple to make & you can alter the types of beans or herbs & spices to make it to suit whatever you're eating it with. It's a family favourite at BBQs or in packed lunch boxes!

Serves: 8 

  • 1 can chick peas
  • 1 can borlotti beans
  • 1 can flageolet beans
  • 1 can red kidney beans
  • 1 can sweetcorn
  • 1 red chilli, diced small
  • 1 tablespoon fresh mint, roughly chopped
  • 3 spring onions, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • salt & pepper to taste

Prep:10min  ›  Extra time:50min  ›  Ready in:1hr 

  1. Drain your cans of beans & sweetcorn, rinsing in cold water.
  2. Put all ingredients into a large salad bowl & mix well.
  3. Let the mixture sit for about an hour (or overnight) to allow the lemon juice to work through the beans.
