About this recipe: These tender succulent Caribbean roast fish are great for barbecues. The family will love them!

  • 2 medium whole fish (red snapper ideal)
  • 1 lime or lemon
  • 2 teaspoons all-purpose seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 Scotch Bonnet chilli
  • 1 small onion
  • 2 clove garlic
  • 1 sprig thyme
  • 2 spring onions
  • 1 medium tomato
  • 1/2 green pepper
  • 5 pimentos (optional)
  • 1 bunch of fresh callaloo or spinach
  • 3 tablespoons butter

  1. Clean and descale fish in water with lime/lemon. Dry fish with kitchen paper, place fish in large bowl. Add dry seasoning, salt, pepper and paprika, and leave to marinate for 3-6 hours in fridge.
  2. Cut up remaining fresh ingredients along with fresh callaloo or spinach. Divide ingredients equally into a bowl and add butter. Mix well.
  3. Stuff the mixture inside the belly of the fish. Use the remaining mixture to add to both sides of the fish.
  4. Wrap in heavy duty foil and cook on a barbecue or in an oven at 180 C / Gas 4. Cook from 20 to 30 minutes turning fish once.
