Lamb Chop Bake

    Makes a whole meal in just one roasting tin - an ideal family weeknight dinner. Add in whatever vegetables or seasonings you have handy.

    Serves: 4 

    • 8 lamb chops
    • 4 potatoes, cut into wedges
    • 2 carrots, sliced thickly
    • 2 courgettes, sliced thickly
    • 1 teaspoon dried rosemary
    • salt and black pepper
    • 1 tablespoon olive oil
    • 150ml (5 fl oz) stock
    • 1 tablespoon tomato puree

    1. Preheat the oven to 210C (410F, gas mark 6). Spread the potato wedges and prepared vegetables in a roasting tin.
    2. Put the chops on top, sprinkle with rosemary and seasonings, and drizzle the olive oil over the top. Bake for 20 minutes.
    3. Mix the stock with the tomato puree, and pour over the chops in the tin. Bake for a further 10 minutes until the chops are cooked through and the vegetables are tender. Serve.

    Something else. Cooked it on 190/200c in my fan oven, and gave it 5mins longer on both cooking times to make sure veg was cooked through.  -  17 Oct 2008


    Used different ingredients. I included red onions, sweet potato and butternut, lovely!  -  01 Jan 2011


    Very nice. Easy and tasty. I used a large roaster as there was a lot of veg and added about 10 minutes to both the cooking times, just to make sure that the veg was cooked through. Great result everybody enjoyed it.  -  17 Aug 2011
