About this recipe:I've been making this for years. I can prepare it in the morning and leave it to marinade all day. As long as you have chicken, a fresh lemon and garlic - you are all set to go! Serve with salad or this is especially nice with cubes of roasted potatoes, flavoured with rosemary.
4 chicken breast fillets
225ml extra virgin olive oil
1 lemon, juiced
2 cloves garlic, crushed
1 teaspoon salt
freshly ground black pepper
1/2 teaspoon paprika

Cut 3 slits in each chicken breast. This will allow the marinade to soak in. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper and paprika for about 30 seconds. Place chicken in a large bowl, and pour marinade over. Using your hands, work marinade into chicken. Cover, and refrigerate for at least 6 hours.
Barbecue, pan fry or cook the chicken breasts under the grill, until they are cooked through.
