A moist apple cake that makes the whole house smell delicious! This cake stores well and is quite easy to make.

Ingredients

2 eggs
250ml vegetable oil
400g caster sugar
275g plain flour
2 teaspoons ground cinnamon
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 teaspoon vanilla extract
500g cored, peeled and diced apple

Preparation method

1. Preheat oven to 180 C / Gas mark 4. Lightly grease and flour a 20x30cm cake tin.
2. Beat vegetable oil and eggs until foamy. Add the sugar, flour, cinnamon, bicarbonate of soda, salt and vanilla; mix well. Stir in the diced apples. Spoon mixture into prepared tin.
3. Bake in preheated oven for 30 to 40 minutes. Cool cake in tin for 10 minutes before removing.

    Tweak: addoyle Altered ingredient amounts:

    Hi I agree with the reduced sugar and the sultanas or mixed fruit. I cook for an hour. Sprinkle the top with a demorara/cinamon mixture to complete......oh well...and some clotted cream.......

    I made exactly as written except for using 200g of caster sugar rather than 400g. Use half of the sugar for fab results. i might even go down to 150g the next time i make it (there will definitely be a next time as this cake is great)

    Not at all happy with this recipe, apart from the smell which is delightful, I did consider dropping the amount of sugar - still cooking after 2 hours - NEVER AGAIN!!

    I agree with previous reviewers - a great cake but sugar needs to be reduced by at least half. I did use a mix of dates and apple because I didn't have a full 500g of apple, it's also great as a pudding with custard.
