A moist apple cake that makes the whole house smell delicious! This cake stores well and is quite easy to make.

Ingredients

2 eggs
250ml vegetable oil
400g caster sugar
275g plain flour
2 teaspoons ground cinnamon
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 teaspoon vanilla extract
500g cored, peeled and diced apple

Preparation method

1. Preheat oven to 180 C / Gas mark 4. Lightly grease and flour a 20x30cm cake tin.
 
2. Beat vegetable oil and eggs until foamy. Add the sugar, flour, cinnamon, bicarbonate of soda, salt and vanilla; mix well. Stir in the diced apples. Spoon mixture into prepared tin.
 
3. Bake in preheated oven for 30 to 40 minutes. Cool cake in tin for 10 minutes before removing.

  • Tweak: Tashy Used different ingredients:

    I added Pecan nuts on top along with brown sugar and it was lovely. Used half the quantity of everything as made a small cake, and added sultanas and lots more cinnamon ontop and in the cake. Was delicious!

    Tweak: zaden Altered ingredient amounts:

    I put in 150g of caster sugar and grated the apple (larger grating side). Next time will either try the smaller grating side or puree the apple. The lower amount of sugar was fine, probably can get it down to 100g I think.

  • this has turned out lovely - i also had to give it extra time because it was liquidy in the centre, but this may be because i used self raising flour, I had no plain flour in the house.

    This cake was very easy to make and did indeed make the house smell lovely. However I ended up cooking it for an hour and a half as it was still liquid in the middle after 45 mins. It tasted delightful.
