Chocolate pumpkin bread

    This bread is delicious, moist, and it freezes well! I bake them in mini bread tins and wrap them up to give as gifts.

    Serves: 36 

    • 500g caster sugar
    • 400g pumpkin puree (tinned or fresh)
    • 250ml vegetable oil
    • 150ml water
    • 4 eggs
    • 450g plain flour
    • 1 tablespoon ground cinnamon
    • 1 tablespoon ground nutmeg
    • 2 teaspoons bicarbonate of soda
    • 1 1/2 teaspoons salt
    • 200g chocolate chips (or chopped plain chocolate)
    • 75g chopped walnuts (optional)

    1. Preheat oven to 180 C / Gas mark 4. Grease and flour three three 23x12cm (9x5 in) loaf tins.
    2. In a large bowl, combine sugar, pumpkin, oil, water and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, bicarb and salt. Fold in chocolate and nuts. Fill tins 1/2 to 3/4 full.
    3. Bake for 1 hour, or until an inserted knife comes out clean. Cool on wire racks before removing from the tins.

    You can find tinned, 100% pumpkin puree at Waitrose, or you can make your own using this recipe.
