    About this recipe: A nice sweetened chestnut purée. This is fabulous on its own when spread on crusty bread, or use it for a myriad of cakes and desserts. Wonderful in crepes.

    Serves: 10 

    • 250g chestnuts
    • 175g caster sugar
    • 75ml water
    • 1 vanilla bean

    1. With a knife, cut a cross across the flat side of each chestnut. Fill a pan with cold water and add the chestnuts. Bring to the boil, then simmer for 45 minutes to 1 hour.
    2. Make a syrup with the sugar and 75ml water: bring to the boil, reduce heat and simmer for 10 minutes.
    3. Rinse the chestnuts and let them cool off a little bit before peeling them. Once peeled, purée them till smooth with the syrup.
    4. Cook the mixture over low heat with the vanilla bean, cut in half lengthways and and well scraped, for about an hour.
