Sweet chestnut puree

About this recipe:
A nice sweetened chestnut purée. This is fabulous on its own when spread on crusty bread, or use it for a myriad of cakes and desserts. Wonderful in crepes.
175g caster sugar
1 vanilla bean
- With a knife, cut a cross across the flat side of each chestnut. Fill a pan with cold water and add the chestnuts. Bring to the boil, then simmer for 45 minutes to 1 hour.
- Make a syrup with the sugar and 75ml water: bring to the boil, reduce heat and simmer for 10 minutes.
- Rinse the chestnuts and let them cool off a little bit before peeling them. Once peeled, purée them till smooth with the syrup.
- Cook the mixture over low heat with the vanilla bean, cut in half lengthways and and well scraped, for about an hour.
