2 eggs, beaten
100g caster sugar
100g uncooked white rice
1 teaspoon vanilla extract
75g sultanas (optional)
1/8 teaspoon ground nutmeg

Preheat oven to 150 C / Gas mark 2. Grease a 2 litre baking dish.
Beat together the eggs and milk. Stir in sugar, rice, butter, vanilla extract, sultanas and nutmeg. Pour into prepared dish.
Bake for 2 to 2 1/2 hours in the preheated oven. Stir frequently during the first hour.
