About this recipe: This has been a favourite of my husband's since as long as I can remember. His mum always manages to bake him one every year (she's 75) for Christmas - though she always claims it's his last.

Serves: 16

  • 900g (2 lb) dates, pitted and chopped
  • 900g (2 lb) English walnuts, coarsely chopped
  • 200g (7 oz) caster sugar
  • 1 tablespoon baking powder
  • 150g (5 oz) plain flour
  • 4 egg yolks
  • 4 egg whites

  1. Preheat the oven to 150 C / Gas mark 2. Grease and flour a 25cm (10 in) tube cake tin.
  2. In a large bowl, combine dates, walnuts, sugar, baking powder and flour. Stir in egg yolks. In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold the whites into the fruit/nut mixture until no streaks remain. Spoon into prepared tin.

Can I use a round cake dish for this recipe? What diameter please? Thank-you. - 16 Nov 2011

If I half the ingredients do I leave the cake in the oven for half the time??? - 01 Jan 2011

Altered ingredient amounts. Halved and halved again. Did not think this recipe would work - unbelievably lovely! Could not afford to risk original amounts going wrong, can't wait to try again but will only halve once. - 20 Apr 2011
