Grilled Tuna with Vegetables

    A delicious fish supper that's packed full of flavour as well as omega-3 fatty acids! Tuna is marinated with grapefruit juice and chilli, then grilled with potatoes, carrots and baby sweetcorn.

    Serves: 2 

    • 2 steaks tuna
    • 300g new potatoes, diced
    • 3 carrots, diced
    • 8 baby sweetcorn, chopped
    • cooking oil as needed
    • 2 teaspoons hot chilli powder
    • 100ml grapefruit juice
    • rosemary as needed
    • salt and pepper to taste

    1. Marinate tuna with grapefruit juice, 3 tablespoons oil, chilli powder, salt and pepper for at least 1 hour, turning halfway through.
    2. Wrap tuna in foil and cook under a preheated grill for 10 minutes.
    3. Heat 1-2 tablespoons oil in a frying pan until hot. Add the vegetables and saute until vegetables are tender.
    4. Transfer vegetables to a baking tin, add a little rosemary and place under the grill with the tuna.
    5. After the tuna has had its 10 minutes, remove from foil and place back under the grill. Cook for an additional 10 minutes.
