About this recipe: These simple, classic biscuits are welcome any time of year. For a festive touch at Christmas, use Christmas-themed biscuit cutters and decorate with icing.


Serves: 48 

  • 250g butter
  • 100g caster sugar
  • 1 egg
  • 1/2 teaspoon almond extract
  • 300g plain flour

  1. Cream the butter until light. Gradually add the sugar and beat until light and fluffy. Beat in the egg and almond extract.
  2. Gradually blend in the flour. Cover and chill dough for at least 1 hour.
  3. Preheat oven to 180 C / Gas mark 4.
  4. Roll dough out on a lightly floured surface to .25cm thickness. Cut into desired shapes, using lightly floured biscuit cutters. Place biscuits on ungreased baking trays.
  5. Bake in the preheated oven for 8 to 12 minutes or until golden. Remove to wire racks to cool completely. Decorate as desired.

Used different ingredients. Instead of almond essence, try mixed spice or cinnamon for a great tasting biscuit - 07 Mar 2009


I found these a bit bland personally. Not enough flavour for my personal liking, but otherwise a great and very easy recipe to make with kids and I'll definitely be experimenting with flavours in this recipe in the near future! - 11 Dec 2009


Absolutely delicious. I split my dough into 2 separate lots. In one added mixed fruit and mixed spice to make a Christmas biscuit. In the other ginger. Easy to make. Will use this recipe again - 22 Dec 2012
