Naan Bread Pizzas

    This is a quick and easy snack, which can also be served as a starter or part of a main course. Naan breads are topped with tomato sauce and mozzarella, before being grilled to perfection.

    Serves: 4 

    • 4 small naan breads
    • 2 tomatoes, diced
    • 1 (140g) tin tomato puree
    • 1 dash olive oil
    • 1-2 cloves garlic, finely chopped
    • salt and pepper
    • 400g mozzarella cheese
    • freshly chopped basil (or dried)
    • 1 dash lemon juice

    1. Preheat grill to medium. Line a baking tray with foil.
    2. Arrange naan breads onto prepared tray. Gently prick naan bread with a fork (only halfway through). Set aside.
    3. Mix together tomato puree, basil, garlic, olive oil, lemon juice, salt and pepper.
    4. Spread tomato sauce evenly onto naan breads. Top with grated mozzarella.
    5. Place under the grill and cook until the mozzarella is lightly browned and bubbly, 5-8 minutes.
