    These all-butter shortbread biscuits are simple yet luxurious. Use a biscuit cutter or a biscuit press to make festive shapes for Christmas, Hanukkah, Easter or any occasion!

    Serves: 12 

    • 500g butter, softened
    • 200g caster sugar
    • 2 teaspoons vanilla extract
    • 500g plain flour

    Prep:15min  ›  Cook:12min  ›  Ready in:27min 

    1. Preheat oven to 180 C / Gas mark 4.
    2. Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well.
    3. Put through biscuit press and form biscuits onto baking trays. Alternatively, roll out to 1cm thickness and cut out desired shaped with biscuit cutters. Bake for 10 to 12 minutes.

    Something else. Only cook for about 15 - 20 mins. They will still appear soft, pale and uncooked but they will firm up once they have cooled down. If you keep cooking them assuming they are not done, they will be very brittle. Allow to cool on tray before removing.  -  13 Sep 2010

    brilliant quick and very easy recipe for busy women like us with children wanting to get busy in the kitchen. I used 300g of butter instead of 500g which seemed to solve the problem with wetness and baked for 20 minutes. Turned out to be perfect on my first attempt, so now its given me the idea to parcel some up for little christmas gifts. happy baking everyone x  -  04 Dec 2011
