Poached Pears with Amaretto Sauce

    I'm a total novice when it comes to making puddings and similar sweet things, so to finish off a romantic meal I decided this easy-to-make fruit dessert would be just the thing. For the record, the boyfriend absolutely loved it! For even less preparation you could use tinned pears instead.

    • 2 medium to large pears (peeled, cored and halved)
    • 1 vanilla pod (split lengthways)
    • juice of 1 lemon
    • 100g brown sugar
    • 2-3 strips of orange zest
    • 250ml water
    • 100g Mascarpone cheese
    • 2 small scoops vanilla ice-cream
    • 2-3 tbsp Amaretto liqueur
    • 1/2 tsp ground nutmeg

    1. Peel and carefully cut the pears in half. Remove the core but leave the stalk. Soak in lemon juice to prevent pears from discolouring.
    2. Mix the sugar, vanilla pod, orange zest and water in a saucepan and stir over medium heat until sugar dissolves. Bring to the boil and continue boiling for 5 minutes. Add the pears and bring to the boil, reduce heat and simmer covered for 10 minutes or until pears are soft.
    3. In a mixing bowl, whisk together the Mascarpone, ice cream, Amaretto and nutmeg until smooth and creamy. Put in fridge until pears are done.
    4. Remove pears from liquid and allow to cool 1 min before serving. Divide the sauce into 2 bowls and arrange the pear halves on top.
