Elisa's famous fudge

    This is a recipe my family love! it is simple and does NOT require a sugar thermometer like most fudges. It's pretty simple and does not take an expert to make it; because of this many people make variations to this recipe!! You can use any kind of chocolate and/or nuts. I hope you enjoy my recipe!

    Serves: 48 

    • 300g caster sugar
    • 150ml evaporated milk
    • 25g butter
    • 1/4 teaspoon salt
    • 200g white marshmallows
    • 125g plain chocolate
    • 125g white
    • 50g chopped pecans
    • 1 teaspoon vanilla extract

    Prep:20min  ›  Cook:10min  ›  Extra time:2hr  ›  Ready in:2hr30min 

    1. Line a 20cm (8 in) square dish with greaseproof paper.
    2. In a heavy saucepan over medium heat, combine sugar, evaporated milk, butter and salt. Bring to the boil and let simmer 5 minutes. Remove from heat and stir in marshmallows, chocolate, pecans and vanilla. Continue stirring until marshmallows are melted and all ingredients are thoroughly combined. Pour into prepared dish.
    3. Refrigerate for 2 hours, until firm. Lift from dish, remove foil, and cut into pieces.

    Something else. i put in the frezzer when set this made it much easier to cut up  -  22 Jan 2009


    This fudge was utterly delicious and very easy to make. However, it was very sticky, so I wrapped each piece in cellophane as it was a gift. Very well received.  -  26 Dec 2009
