275g caster sugar
225g unsalted butter, melted
225g plain chocolate, melted
75g unsweetened cocoa powder
75g self-raising flour, sifted
110g white chocolate chips

Preheat oven to 180 C / Gas 4. Grease or line a baking tray with baking parchment.
Beat together eggs and sugar until light and fluffy. Set aside.
Melt butter and chocolate in a double boiler or microwave. Allow to cool slightly, then mix into egg-sugar mixture.
In a small bowl, combine flour and cocoa. Gradually fold this into the batter.
Stir in chocolate chips and pour mixture into baking tray. Bake in preheated oven for 25-30 minutes.
By far the best brownie recipe I've made. I didn't have enough butter so I substituted with 200g sunflower oil and I also added a handful of chopped pecans for a little crunch. Wonderful gooey texture. They didn't last long! - 02 Feb 2014
I made these as a trial with gluten free flour must say very impressed just susituated the flour and it worked a treat. Add to keep my eye on baking them as gf is drier so I bake on 170degrees - 16 Apr 2015
