Chicken with Black Pepper

    A quick and easy chicken dish, which is packed full of flavour. Chicken breasts are stir-fried with freshly ground peppercorns, ground coriander, lemon juice and cashew nuts. Enjoy with rice or whatever you fancy.

    Serves: 4 

    • 400g skinless chicken breast fillets, cut into 2.5cm cubes
    • 1 teaspoon black peppercorns
    • 4 tablespoons oil
    • 1 teaspoon ground coriander
    • 3/4 teaspoon salt or to taste
    • 50g chopped cashew nuts
    • 2 teaspoon lemon juice

    1. Toast peppercorns in a dry hot pan until fragrant, about 2 minutes, then coarsely crush.
    2. Heat oil in a large frying pan over medium heat. When hot, lower heat to low and add ground peppercorns. Stir-fry for 2 minutes.
    3. Add chicken, coriander and salt. Continue to stir-fry for another 10 minutes.
    4. Stir in cashew nuts and lemon juice and stir-fry for 1 more minute. Serve.
