Koulourakia (Greek butter biscuits)
These all butter biscuits are traditionally made in Greece round Easter. I like them any time of year, and also make them at Christmas. They're delicious dunked in coffee - as is done in Greece!
Ingredients
Serves: 48
- 225g butter, softened
- 150g caster sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 275g plain flour
- 1 egg, beaten

- Preheat the oven to 200 C / Gas mark 6. Grease baking trays or line with parchment.
- In a medium bowl, cream together the butter, sugar and egg until smooth. Stir in the vanilla and almond extracts. Blend in the flour to form a dough. you may have to knead by hand at the end. Take about a teaspoon of dough at a time and roll into twists, 'S' shapes or wreaths. Place cookies 2 to 5cm apart onto the prepared trays. Brush with beaten egg.
- Bake for 10 minutes in the preheated oven, or until lightly browned and firm.

Altered ingredient amounts. I had to add some more flour (about 60g)as the dough was too soft. - 12 May 2009

brilliant, i needed a biscuit recipe that i could make with my grandson (who was alarmed that i had no biscuits for his weekend stay! super easy and tasty but it does need loads more flour and benefits from an hour in the fridge to harden the dough before forming. delicious - 03 Oct 2011
