Proper Aberdeen Angus Beef Stew

    This my famous stew, loads of people have tried this one. Use only proper Aberdeen Angus Beef. Used to do 3 of us 3 days (the last day being lunch with crusty bread instead of dumplings). This is good old fashioned food!

    Serves: 9 

    • 250 to 350g (1/2 to 3/4 lb) of stewing steak, cubed
    • 1 teaspoon oil
    • 1 small swede, peeled and cubed
    • 2 carrots, peeled and chopped
    • 1 parsnip, peeled and chopped
    • 1 handful peas
    • 1 handful sweetcorn kernels
    • 1 clove of garlic, crushed
    • 2 beef stock cubes
    • 2 vegetable stock cubes
    • salt, pepper and mixed herbs to taste
    • boiling water
    • Dumplings
    • 225g (8 oz) self raising flour
    • 110g (4 oz) butter
    • pinch of salt
    • cold water

    1. Pre heat oven to 150 C / Gas 2.
    2. Brown cubed steak in a pan with oil, drain and put into stew pot with vegetables, stock, salt, pepper, garlic and pinch of mixed herbs.
    3. Boil water and add to pot until ingredients are just covered, stir and put into oven.
    4. Cook for 2 hours, then increase temperature to 180 C / Gas 4, and cook for another hour. Add dumplings and cook for further 30 minutes.
    5. Dumplings preparation: Crumble butter, salt and flour together. Add sufficient water to bind together, by tablespoons. Roll into small balls add to stew.
