About this recipe:Being that I'm from America I just had to add these fluffy pancakes. Also, since I can't find a maple syrup that I like, I took an old Apple Pop-Tart filling recipe and came up with this. Great for breakfast or even dessert!
4 med Golden Delicious apples - Peeled, cored and sliced into 1 cm slices
1 1/2 tsp cornflour
6 tbsp water
6 tbsp light brown sugar
1/2 tsp ground cinnamon

Pancakes: In a large bowl sift together the flour, sugar, cinnimon, baking powder & salt.
Make a well in the centre and pour in the milk, eggs & melted butter. Mix together until just smooth - some lumps are ok.
Heat a pan and add a Tablesppon of vegetable oil over med heat. Pour a ladleful of the batter (roughly 2oz) into the pan and let cook until you see small bubbles start to form all over the pancake (the edges will clour slightly) Flip the pancake and brown the other side.
Transfer the pancake to a plate and cover in tin foil to keep them warm
Apples: In the same pan, melt the butter over medium heat.
Add in the apples and sautee for 3 - 5 mins or until just soft
Add the corn flour to the water and disolve, then add into the apples, followed by the sugar & cinnamon.
Let apples simmer for about 2 min, stiring occasionally. Take off the heat and serve warm over the pancakes.
