French beef stew

    This hearty tomato and vegetable beef stew is quick, easy and delicious - It'll become a regular in your house.

    Serves: 8 

    • 675g cubed beef stewing steak
    • 4 tablespoons plain flour
    • 2 tablespoons vegetable oil
    • salt and freshly ground black pepper to taste
    • 2 (400g) tins chopped tomatoes
    • 400ml beef stock
    • 4 carrots, chopped
    • 2 potatoes, peeled and chopped
    • 3/4 teaspoon dried thyme
    • 2 tablespoons Dijon mustard

    1. Combine beef and flour in a large plastic food storage bag and toss to coat evenly.
    2. In a 6 litre casserole or saucepan, brown beef in hot vegetable oil over medium high heat. Season with salt and pepper, if desired.
    3. Add tomatoes, beef stock, carrots, potatoes and thyme. Bring to the boil; reduce heat to medium-low, cover; and simmer for 1 hour or until beef is tender. Blend in mustard and serve.

    Have used this recipe twice, very good and easy mid week dinner , i cooked mine in pan then put in slow cooker  -  11 Oct 2009


    I had some stewing steak I needed to use tonight. Looking for a very quick, very easy recipe I stumbled across this and let me tell you - it is absolutely delicious!! I followed the recipe completely except using peeled tinned tomatoes instead of chopped tinned tomato. Not even sure if this would make much difference. I was skeptical about the Dijon mustard at the end but chucked in the two tablespoons. This was a very good recipe and I will be sharing and making it again!! Serve with a lovely loaf of warm, crusty bread.  -  29 Sep 2009


    just made this recipe it was delicious . i only used one can of tomatoes and 2 carrots. i cooked it in my slow cooker for about 4 hours x  -  22 May 2013
