Creamy Tomato Fettuccine

About this recipe: This amazingly easy and quick pasta dish is both delicious and budget friendly.


Serves: 7 

  • 1 (500g) packet fettuccine pasta
  • 125g frozen garden peas
  • 1 (400g) tin chopped tomatoes
  • 250ml light soured cream
  • 100g grated Parmesan cheese
  • salt and freshly ground black pepper to taste

  1. Cook pasta in a large pot of boiling water, adding peas just before pasta is done. Drain.
  2. In the empty pot, combine tomatoes, soured cream and Parmesan. Add pasta and peas, and season with salt and pepper to taste. Cook briefly over low heat until sauce is heated through.


If you don't fancy soured cream, try using single cream instead.

Parmesan cheese

Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.

A nice basic meal that can be adapted or embellished depending on what you have to hand, I'm sure it would be delicious with some garlic or other herbs to liven it up. Also extremely fast to make! - 25 Mar 2012
