About this recipe: An Italian twist on quesadillas, this recipe makes for an easy midweek supper or lunch.
Embellish the quesadillas with the addition of fresh chopped mushrooms, peppers or herbs. You could also use chorizo instead of prosciutto, or skip the prosciutto altogether for a vegetarian dish.
