Preheat the oven to 180 C / Gas mark 4. Line a baking tray with parchment.
Lay two tortillas side by side on the prepared baking tray. Spread with 4 tablespoons of sauce each. Sprinkle each with equal amounts of the grated mozzarella and diced prosciutto. Lay the remaining two tortillas on top of each prepared tortilla.
Bake in the preheated oven for 10 minutes, or until the cheese is melted and the tortillas golden brown. Cut into quarters and serve.
Embellish the quesadillas with the addition of fresh chopped mushrooms, peppers or herbs. You could also use chorizo instead of prosciutto, or skip the prosciutto altogether for a vegetarian dish.
