Serves: 2

  • 4 flour tortillas
  • 8 tablespoons pizza or pasta sauce
  • 100g grated mozzarella cheese
  • 4 slices prosciutto, diced

Prep:5min  ›  Cook:10min  ›  Ready in:15min

  1. Preheat the oven to 180 C / Gas mark 4. Line a baking tray with parchment.
  2. Lay two tortillas side by side on the prepared baking tray. Spread with 4 tablespoons of sauce each. Sprinkle each with equal amounts of the grated mozzarella and diced prosciutto. Lay the remaining two tortillas on top of each prepared tortilla.
  3. Bake in the preheated oven for 10 minutes, or until the cheese is melted and the tortillas golden brown. Cut into quarters and serve.

Cook's notes:

Embellish the quesadillas with the addition of fresh chopped mushrooms, peppers or herbs. You could also use chorizo instead of prosciutto, or skip the prosciutto altogether for a vegetarian dish.

Used different ingredients. I used a jar of pasta sauce, philadelphia, grated cheddar, onion, fresh tomato, red pepper, sweetcorn, ham and bacon for my lunch!! Absolutely delicious and ready from start to finish in 15 minutes!!! - 26 Apr 2010

Altered ingredient amounts. I used red leicster cheese as I didn't have any mozzarella, and added some chopped olives, really good! - 13 Feb 2009

Used different ingredients. I used half the amount of tomato paste for lack of sauce - 06 Jul 2009
