Blueberry Cream Muffins

    Rich and delicious blueberry muffins. The secret is the soured cream.

    Serves: 24 

    • 4 eggs
    • 400g caster sugar
    • 225ml vegetable oil
    • 1 teaspoon vanilla extract
    • 500g plain flour
    • 1 teaspoon salt
    • 1 teaspoon bicarbonate of soda
    • 500ml soured cream
    • 300g blueberries

    1. Preheat the oven to 200 C / Gas mark 6. Grease 24 muffin cups or line with paper muffin cases.
    2. In large bowl beat eggs, gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and bicarb.
    3. Stir dry ingredients into egg mixture alternately with soured cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
    4. Bake in preheated oven for 20 minutes.

    Used different ingredients. we didnt have any blueberries at hand so we added raspberries and white chocolate chips.  -  11 May 2009
