Hot Milk Chocolate Cake

    This is the easiest chocolate cake I have ever made...minimum effort but maximum gorgeousness. Ice with your favorite icing. My family love it with chocolate fudge icing and decorated with Smarties, but I'm sure you could make it look more elegant with different decorations. Having said that, it's lovely without any decoration at all!

    Serves: 10 

    • 1 cup caster sugar
    • 3 eggs
    • 1 cup plain flour
    • 2 heaped teaspoons baking powder
    • 2 heaped tablespooons cocoa powder
    • 1 pinch salt
    • 1 teaspoon vanilla essence
    • 1/2 cup milk
    • 1 rounded tablespoon butter (about the size of a medium egg)
    • Optional
    • choc chips or chopped nuts

    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Cream the sugar and eggs until pale.
    2. Add the sieved dry ingredients and the vanilla essence and mix together.
    3. Put the milk and butter into a saucepan and melt the butter (don't let the milk boil, once it starts to go bubbly around the edges, take it off the heat).
    4. Pour it into the rest of the mixture and beat it until there are loads of air bubbles. Add your choc chips or nuts, if using.
    5. Pour it into two victoria sponge tins and bake at 200 degrees C (400 F) for about 15 - 20 minutes.
    6. Ice as desired, but especially yummy with chocolate fudge icing.

    Wow! I have made this fab cake twice now, both times for birthday cakes. Its a wonderfully easy cake to make, I made no alterations, worked perfectly with choc fudge filling and top.  -  03 Oct 2011


    I am about to make this for about the 5th time therefore I think it actually deserves 5 stars instead of the 4 stars I originally gave it. Everyone loves it.  -  12 Mar 2010


    Didnt have tins so baked it as one whole cake in a casserole dish. I therefore had to cook it for 40-45 minutes. It came out well. nice and light. will make this again.  -  26 Jan 2010
