Strawberry Jelly with Cream

    Strawberry Jelly with Cream is a classic. It looks great in a dessert cup or a small glass bowl. You could top it off with some vanilla ice cream or more strawberries on top.

    Serves: 4 

    • 200g fresh strawberries, hulled
    • 4 tablespoons caster sugar
    • 250ml water
    • 1 sachet strawberry jelly
    • 1 small pot double cream

    1. In a saucepan, combine the strawberries and sugar. Let the sugar melt a little, then gradually add the water, stirring after every addition of water.
    2. Bring the water to the boil, and when it bubbles, leave it there for 2 minutes over medium heat. Let it cool.
    3. Follow the instructions on the packet of jelly. When you are left with the liquid gelatin mix, pour it into your glass bowls or dessert cups and plop a few strawberries into each serving.
    4. Leave it to set for around an hour or so. Serve with cream to pour over, and with the remaining strawberries.
